At the heart of Chef Kenny's philosophy lies a deep appreciation for classical Japanese dishes, characterized by their delicate craftsmanship and the use of the finest quality ingredients. He believes in the principle of simplicity, adhering to traditional Japanese pairings while skillfully adapting to the unique tastes of his customers. His favourite dish is the humble Nigiri. This seemingly simple sushi bite encapsulates a world of skill, from the precise cooking and seasoning of sushi rice to the artful cutting of fish and the specialised hand technique required to combine these elements perfectly. Each Nigiri crafted by Chef Kenny is a reflection of his extensive training and profound abilities as a sushi chef.

Chef Kenny has worked in Europe too, spreading his passion for authentic Japanese cuisine. His latest venture involves bringing an intimate dining experience to Danieru in Chelsea, promising an unforgettable gastronomic journey where he can truly flex his Sushi skills and knowledge.

Fluent in Japanese, Chef Kenny finds solace in the serene countryside of Japan, where he believes the purity of water and air enhance the flavour of the food. His dedication to his craft is evident in his impressive collection of over 100 knives, including a Maguro bōchō, a specialized knife for filleting whole tuna. With over 25 years of experience, his knife skills are remarkable, allowing him to perform intricate leaf and fruit carvings with remarkable precision.

Beyond the kitchen, Chef Kenny is a voracious learner, constantly expanding his knowledge through an extensive collection of books covering recipes and the rich history of Japanese cuisine. Though a man of few words, Chef Kenny's passion speaks volumes through his dishes. He finds great joy in sharing his love for sushi with his customers, and nothing satisfies him more than witnessing the delight his food brings to those who savour them.
